Mexican Chicken Rice Bowls
The best part of this recipe is that it is a complete meal in a bowl! It has carbs, proteins and fats and is packed with nutrients from the vegetables!

Ingredients:
- 1 pound ground chicken
- 2 T avocado oil
- ½ packet of taco seasoning
- 1 bell pepper, diced
- ½ red onion, diced
- 1 avocado, diced
- 1 can of black beans
- 1 can of corn
- 1 can of green chilis
- 1 ½ cup Mexican cheese
- 2 packets of microwavable brown rice
- Sour cream, for topping
- Fresh cilantro, for garnish
Instructions:
- Add the ground chicken and avocado oil to a large skillet and cook until cooked thoroughly. Once the ground chicken is cooked, add ½ the taco seasoning packet and stir until well mixed. Add some water if the meat seems too dry.
- While the chicken is cooking, start prepping the other ingredients. Dice the bell pepper, red onion and avocado, drain the black beans, corn and green chilis, and chop the fresh cilantro.
- Microwave the microwavable rice according to the package instructions.
- Once everything is prepared, assemble the bowls starting with the rice and chicken, and add the rest of the toppings to your preference. Enjoy!
