Be Well Table; BBQ Ranch Chicken Bowls

A quick, crowd-pleasing bowl layered with tender BBQ-glazed chicken, fluffy rice, fresh veggies, and melty cheddar, finished with a creamy ranch drizzle for the perfect balance of smoky, savory, and fresh.

Ingredients:

  • 2 cups cooked chicken, chopped or shredded
  • ½ cup no-sugar-added BBQ sauce (plus more for drizzling)
  • 3 cups cooked rice 
  • 1½ cups corn 
  • 1 large cucumber, diced
  • ½ cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • ¼ cup ranch dressing

Instructions:

  1. In a skillet over medium heat, add the cooked chicken and ½ cup BBQ sauce. Warm for 3–5 minutes, stirring until the chicken is heated through and coated.
  2. Divide the cooked rice evenly between four bowls.
  3. Top each bowl with BBQ chicken, corn, cucumber, tomatoes, and shredded cheddar.
  4. Drizzle with ranch dressing and extra BBQ sauce as desired. Enjoy!
