A nourishing, elevated side dish that is ready in 20 minutes and pairs well with any weeknight dinner.

Total time: 20 minutes
Ingredients:
- 1 bunch broccolini
- 3 T olive oil
- 1 shallot
- 1 T garlic, minced
- Salt and pepper, to taste
For Whipped Goat Cheese:
- 8 oz goat cheese
- ½ T lemon juice
- ¼ tsp. salt
- ¼ tsp. red pepper flakes
Instructions:
- In a food processor, whip together all of the ingredients for the whipped goat cheese. Pulse until it is nice and creamy. Spread the whipped goat cheese on a platter and set to the side.
- Boil salted water in a large pot. Once boiling, add the broccolini and cook for about four minutes or until bright green. Remove from the pot and set aside.
- While the broccolini is cooking, thinly slice the shallot.
- In a large skillet, heat olive oil over medium heat. Add the shallots and garlic, and cook until they are crispy. Once crispy, add the salt and pepper, mix and remove from the heat.
- Place the cooked broccolini over the whipped goat cheese and top with the crispy shallots.

- Broccolini, also known as baby broccoli, is packed with vitamin C. Vitamin C can help strengthen your immune system.
- Broccolini is also a great source of folate, fiber and antioxidants.
- If you do not like spicy, omit the red pepper flakes.
