Be Well Table; Raspberry Crumble Quinoa Bowl

High protein quinoa recipes are easy to come by, but this one is a unique way to use quinoa for breakfast and packs about 33 grams of protein per bowl!

Prep time: 10 minutes Total time: 10 minutes

Ingredients:

  • 1 cup quinoa, cooked
  • 1 scoop Vital Proteins Vanilla Protein Powder
  • ¼ cup milk
  • ¼ cup raspberry jam
  • 2 tablespoons chia seeds
  • ¼ cup fresh raspberries, for topping
  • 1 teaspoon of @klimscaramels 100% Pure Madagascar Vanilla Extract
  • 1 tablespoon peanut butter, for topping

For Streusel:

  • 1 ½ tablespoons all-purpose flour
  • 1 tablespoon brown sugar 
  • ½ tablespoon granulated sugar
  • Dash of salt
  • 1 tablespoon melted butter

Instructions:

  1. Add the cooked quinoa, vanilla protein powder, milk, raspberry jam, and chia seeds to a bowl and mix. Add more milk if needed.
  2. Make the streusel: mix together the flour, sugars, and salt. Drizzle the melted butter over the mixture and use a fork to smash the mixture until clumpy. Scatter the streusel over the quinoa bowl.
  3. Top the quinoa bowl with the streusel and raspberries and drizzle the peanut butter on top.

Notes: 

  • About 33 grams of protein per bowl
