919 Backyard BBQ: Honey Lime Soy Marinated Chicken Bowl

As the days get warmer, I naturally start leaning toward lighter, healthier meals. This month, I’m sharing one of my go-to favorites: Honey Lime Soy Marinated Chicken.

Paired with rice and fresh vegetables, it’s always a hit. You can easily switch up the sides, but I usually love it with Asian-inspired green beans, zucchini, and marinated cucumbers.

Ingredients

Chicken + Marinade

  • 2 chicken breasts, butterflied 
  • 2 tablespoons olive oil 
  • 2 tablespoons honey 
  • 1½ to 2 tablespoons soy sauce 
  • Juice of 1 lime 
  • 2 cloves garlic, minced 
  • Salt and pepper, to taste 
  • ½ tablespoon dried oregano 

For Serving

  • Jasmine rice 
  • Fresh vegetables (green beans, zucchini, etc.) 

Asian Marinated Cucumbers

  • 1 pack Persian cucumbers (about 5) 
  • ½ teaspoon salt 
  • ½ tablespoon sesame oil 
  • ¾ tablespoon soy sauce 
  • ½ tablespoon sugar 
  • ¾ tablespoon rice vinegar 
  • 1 tablespoon chili oil 
  • ½ tablespoon sesame seeds

Instructions

  1. Marinate the Chicken
    In a bowl, mix olive oil, honey, soy sauce, lime juice, garlic, salt, pepper, and oregano. Add chicken and marinate for at least a couple of hours, preferably overnight.
  2. Prepare the Cucumbers (Best if done ahead)
    Slice cucumbers at an angle to your preferred thickness.
    Toss with salt and refrigerate for 20 minutes to draw out moisture.
    Drain and lightly rinse, then return to a bowl.
    Add sesame oil, soy sauce, sugar, rice vinegar, chili oil, and sesame seeds. Stir to combine and refrigerate until ready to serve.
  3. Cook the Rice & Vegetables
    Prepare jasmine rice according to package instructions.
    Bring water to a boil and cook green beans until tender.
  4. Grill the Chicken
    Preheat grill. Cook chicken until it reaches an internal temperature of 160°F, then remove and let rest (it will continue to cook slightly).
  5. Finish the Green Beans
    After boiling, sauté green beans in a skillet with a little sesame oil, soy sauce, chili oil, salt, and pepper until slightly charred.
  6. Assemble
    Slice the rested chicken.
    Build your bowl with rice, vegetables, and chicken. Top with marinated cucumbers for a fresh, flavorful finish.
