Ingredients:
- 2 large green bell peppers
- 8 large eggs
- 2 T avocado oil
- ½ tsp. garlic powder
- Salt and pepper to taste
Instructions:
- Slice the tops of the green bell peppers and remove the seeds. Then, cut the bell peppers into ¾ inch rings
- Over medium-high heat, add 1-2 tablespoons of avocado oil to the pan and let it heat up. Once the oil is hot, fill your pan with bell pepper slices. After a minute, flip the bell pepper slices.
- Crack one egg into each bell pepper and season with garlic powder, salt and pepper.
- Reduce to medium-low heat and place the lid on the pan. Cook until the eggs are cooked to your liking, 3-5 minutes,
- Once cooked, remove the bell pepper and egg from the pan and top with hot sauce or green onions.
- Repeat until you have used all the bell pepper slices.
