Clover Fried Eggs

Brighten up your breakfast table with clover fried eggs – a creative and festive dish perfect for St. Patrick’s Day or any morning that needs a little extra charm!

Ingredients:

  • 2 large green bell peppers
  • 8 large eggs
  • 2 T avocado oil
  • ½ tsp. garlic powder
  • Salt and pepper to taste

Instructions:

  1. Slice the tops of the green bell peppers and remove the seeds. Then, cut the bell peppers into ¾ inch rings
  2. Over medium-high heat, add 1-2 tablespoons of avocado oil to the pan and let it heat up. Once the oil is hot, fill your pan with bell pepper slices. After a minute, flip the bell pepper slices.
  3. Crack one egg into each bell pepper and season with garlic powder, salt and pepper.
  4. Reduce to medium-low heat and place the lid on the pan. Cook until the eggs are cooked to your liking, 3-5 minutes,
  5. Once cooked, remove the bell pepper and egg from the pan and top with hot sauce or green onions.
  6. Repeat until you have used all the bell pepper slices.
